Thyme ‘Doone Valley’ thrives in full sun and requires sharply drained soil; it is vital that the roots do not sit in waterlogged ground during the winter. It is particularly well-suited to Mediterranean-style gardens, gravel borders, or as a "steppable" herb between pathway flags. To maintain its neat, mat-like shape and encourage fresh growth, lightly prune the plant after the flowers have faded in late summer. When harvesting for the kitchen, snip the tips regularly. If growing in pots, ensure you use a gritty compost mix to prevent root rot.
